Potato, parsnip and ham casserole

Potato, parsnip and ham casserole, adapted from:

3/4 stick of butter (6 T)
3 T flour
1 3/4 cups heavy cream
1 t dried thyme
1 t kosher salt
2 t dried mustard
1/2 t black pepper
3 brown potatoes
1 parsnips
1/2 white onion, chopped
1 cups shredded cheddar cheese
1/2 ham, cubed

Wash and peel and slice potatoes and parsnips. Chop up white onion. Cube ham. Mix together in a casserole dish.

Assemble your spices and measuring spoons.

Melt butter in a microwave save dish. Add flour and stir. Add cream and spices, stirring continuously to blend.

Pour mixture over potatoes, parsnips, onions and ham.

Cook at 350' for an hour.

Mix in cheese.
