Pasta with Artichokes, Zucchini, and Red PeppersPasta with Artichokes, Zucchini, and Red Peppers
Salt and pepper
Seasonings-I used dried basil
1 onion, diced
1 tbsp garlic
Red pepper flakes
1 medium zucchini, chopped
1 red pepper, chopped
Artichoke hearts, I used bottled, just drain them
1. In a large pan, heat about 1 T of olive oil. Add in onion and cook until tender. Next, add in garlic and a dash of red pepper flakes. Cook for 2 minutes.
2. Stir in the zucchini, red pepper and artichoke hearts. Saute until veggies are tender and hot.
3. Stir in basil
4. Cut kielbesa and add to vegetables. Cook until hot.
5. Serve hot over pasta.
