Meatloaf and baked potatoes

2 pounds hamburger
1/3 cup Dorothy Lynch salad dressing
1 egg
1/2 cup shredded carrots
1 sleeve crushed crackers
1 potato for each of you
sour cream

Mix hamburger, salad dressing, egg, carrots and crackers. Go ahead, use your hands. Put in a casserole dish, leaving space around the meatloaf for the grease to accumulate around the meat (that way you can pour that off later). Brush ketchup on top.

Wash potatoes, stick a few times with a fork and then wrap with aluminum foil.

Bake both the meatloaf and the potatoes at 350 degrees for an hour, or until the middle is done and the potatoes can be squished with your hand (of course use a hot pad).
